Baked Pasta – Gwen Tan

INGREDIENTS
– 200g minced beef (steamed)
– 300g salmon (steam and minced)
– 1 broccoli (washed, cut and steam)
– 10 baby carrots (diced and steam)
– 200g of freshly shaved mozzarella
– 250g low fat Parmesan
Р1/2 bag of brown rice pasta (fussilli)
– 2 teaspoon of freshly chopped Italian pasley
– 1 hard boiled egg (shelled and minced)

DIRECTIONS
– preheat oven to 180 degree Celsius
– cooked pasta until al dente
– mix all ingredients except the cheeses in a large mixing bowl
– separate mixture into 2 equal portions
– line baking dish with parchment paper
– lightly oil the parchment paper with some olive oil
– lay 1 portion of the mixture on your baking dish
– spread it tightly and evenly on the dish, then sprinkle the mozzarella on top
– lay the 2nd portion over this layer, again packing tightly
– finish off by layering the top layer with the Parmesan and Mozzarella
– bake in the oven for 20 to 25 mins
– cut into small pieces, cool before serving
– remaining portion can be refrigerated and serve over the week
